Amish Cinnamon Flop Bread



I think I have already posted this like a dozen times, but every time I make it, I think - this is so delicious I have to tell the world.

It is everything good about a coffee cake:

1. Super easy to make

2. Very few ingredients which you always have in the house

3. Not too sweet

4. Light and cakey with an occasional sweet gooey

5. You can make two, and pretend you are going to give one away and then eat them both anyway. This morning I had every intention of sending one home with my farm helper, because I love him and his whole family. But then, I started thinking his mom is really a better cook than I am anyway, and, well next thing I knew - I had eaten them both (Sorry Lindy - but I thought about you!!)

Cinnamon Flop Bread:

(recipe taken from The Best of Amish Cooking by Phyllis Pellman Good )

Ingredients:

  • 1 cup sugar

  • 2 cups flour

  • 2 tsp baking powder

  • 1 Tbsp melted butter

  • 1 cup milk

  • brown sugar, cinnamon and butter for topping

Directions:

Sift sugar, flour and baking powder together. Add melted butter and milk. Stir together until well blended.

Divide mixture between two 9″ well greased cake pans. The batter is very thick

Sprinkle tops with flour, then brown sugar, then cinnamon.

Push chunks of butter into the dough. (This makes holes and later gets gooey as it bakes.)

Bake at 350 for 30 minutes.
